Ingredients
Method Trim and de-vein the prawns, leaving the tail un-shelled. Heat the peanut oil in a wok and deep fry the prawns for 2 minutes. Turn off the heat and let them sit in the oil for a further 2 minutes. Remove and drain. Mix the salt and sugar together. Heat 1 tblsp oil in a pan, add the garlic, chili and the prawns and stir fry on a high heat for 1 minute. Add the wine and stir for 20 seconds. Sprinkle the salt/sugar mixture over the prawns and stir fry for a further 30 seconds. |
