Ingredients
- 350 gm Okra, whole
- 1 tblsp Coriander seeds, ground
- 1 tblsp Cumin seeds, ground
- 2 tsp Lemon juice
- 1/2 tsp Chili powder
- 1/2 tsp Salt
- Freshly ground black pepper
- 50 gm Onion, cut into half rings
- 5 tblsp Vegetable oil
Method
Rinse the okra and allow to dry. Trim at both ends and slit lengthwise leaving 5 mm uncut at the ends (forming a canoe).
In a bowl, mix the coriander, cumin, lemon juice, chili powder, salt and some black pepper. Open the okra and stuff with the mixed spices.
Heat the oil in a frying pan over a medium-high flame. Put in the onion and stir fry until it begins to brown. Add the okra in a single layer and turn down the heat. Cook for 15 minutes gently turning the okra until all sides are lightly browned. Cover the pan, turn the heat to low and simmer for another 5 minutes. |
