Chola Cauliflower PDF Print E-mail

  • 350 gm Cauliflower florets, 40 mm across
  • 4 tblsp Vegetable oil
  • 1/4 tsp Asafetida, ground
  • 1 tsp Whole black mustard seeds
  • 1 tsp Urad dal
  • 2 whole Dried red chilies
  • 6 Fresh green chilies
  • 3/4 tsp Salt
Method

Soak the cauliflower florets in cold water for 30 minutes. Remove and drain.

Heat the oil in a wok over a medium high flame. When hot, put in the asafetida and immediately the mustard seeds. When the seeds begin to pop (a few seconds), put in the urad dal. When the dal turns reddish, add the dried and fresh chilies. When the red chilies start to darken, put in the cauliflower and stir fry for 1 minute. Add the salt and 1 tblsp water and stir fry for another minute. Add another tblsp water and cook another minute. Continue until cooked for 4 minutes in total.

Cover, turn the heat to low and simmer for a further 5 minutes. Drain off any remaining liquid before serving.
