Stuffed Peppers PDF Print E-mail

Ingredients

  • 3 Bacon rashers, chopped
  • 1 tblsp Olive oil
  • 1 Small onion, chopped
  • 225 gm Beef mince
  • 450 gm Rice, cooked and cooled
  • 4 Large green capsicums
ImageFry the bacon in the oil. In the bacon fat, fry the onions and the beef mince. When the beef is cooked, add the rice and warm through.

Cut the tops off the capsicums and remove the veins and seeds. Stuff the bacon/beef/rice mixture into the capsicums and bake in the oven (200 degC) for 30 - 40 minutes until the capsicums are cooked.
