Turmeric and Cumin Potatoes |

Ingredients
- 700 gm New potatoes, scrubbed
- 5 tblsp Vegetable oil
- 1/2 tsp Black mustard seeds
- 1/2 tsp Cumin seeds
- 1/4 tsp Turmeric
- 1/2 tsp Coriander seeds, ground
- 1/2 tsp Cumin seeds, ground
- 1/2 tsp Chili powder
- 3/4 tsp Salt
Method
Cut the potatoes into 10 mm dice. Heat the oil in a wok over a medium heat. When hot add the mustard seeds and a second later, the cumin seeds. Add the potatoes and stir once or twice before sprinkling in the turmeric. Cook for a further 15 minutes, stirring occasionally, until the potatoes are lightly brown. Add the ground cumin, ground coriander, chili powder and salt and stir fry for another 2 minutes. |
