Ingredients
- 4 tblsp Vegetable oil
- 225 gm Okra
- 4 Garlic cloves, crushed
- 50 mm cube Ginger, finely chopped
- 6 Fresh green chilies, cut diagonally
- 1/2 tsp Turmeric
- 6 Curry leaves
- 1 tsp Cumin seeds
- 450 gm King prawns, peeled and de-veined
- 2 tsp Brown suger
- 2 tblsp Lemon juice
- Salt
Method
Heat the oil in a frying pan and stir fry the okra on a high heat until they are brown on all sides. Drain and set aside.
In the same oil, gently cook the garlic, ginger, chilies, turmeric, curry leaves and cumin seeds for 2 to 3 minutes. Add the prawns and continue to cook until the prawns are tender.
Add the salt, sugar, lemon juice and cooked okra, increase the heat and gently stir fry for a further 5 minutes. Adjust the seasoning if necessary. Serve hot.
