Ingredients
Pierce the pork with a skewer and singe the skin over an open high flame. Plunge the pork into a pot of hot water and leave for 5 minutes.
Remove the pork and scrape off any burnt skin. Place in a large pot, cover with cold water and bring to the boil. Simmer for 1 hour. Remove. Make a paste with the egg whites and flour and rub it over the meat side(s) of the pork. Roast the pork in the oven (200 degC) skin side up for 20 minutes. Turn over and roast for a further 20 minutes. Carve the meat and crackling into strips and serve with the shredded onions, Hoi Sin sauce, pickles and pitta bread.
