Ingredients
- Oil for frying
- 450 gm Pork fillet
- 1 Lemongrass stalk, finely chopped
- 1 Red onion, finely sliced
- 2 Fresh red chilies, finely chopped
- 1/2 Cucumber, cut into strips
- 2 tblsp Chopped spring onions
- Juice of 2 limes
- 1 - 2 tblsp Fish Sauce
- Coriander leaf, finely chopped
Method
Heat a little oil in a frying pan and fry the pork fillets until cooked through and tender. Remove the fillets and put aside to cool.
When the pork is cool, thinly slice the meat and place in a bowl. Add the onion, chili, cucumber, lemon grass and spring onions to the pork. Toss whilst adding the fish sauce and lime juice to taste.
Serve cool garnished with the coriander leaf. |
