Spare Ribs in Black Bean Sauce |

Ingredients
- 350 gm Pork spare ribs
- 1 Garlic clove, crushed
- 1 Slice ginger
- 1 tsp Vegetable oil
- 1 Fresh red chili
Sauce
- 2 tblsp Black bean sauce
- 1 tblsp Soy sauce
- 1 tblsp Dry sherry
- 1 tsp Cornflower, mixed with a little water
Method
Cut the spare ribs into short lengths. Finely chop the garlic, ginger and red chili. Mix all the sauce ingredients together and add the garlic, ginger and chili. Add the spare ribs and mix together thoroughly. Leave to marinate for at least 30 minutes.
Grease a heat-proof plate with oil and place the ribs on it. Place in a steamer and steam vigorously for 30 minutes.
Serve garnished with chopped spring onions.
