Rice Porridge PDF Print E-mail

  • 900 ml Vegetable stock
  • 200 gm Cooked rice
  • 225 gm Minced pork
  • 1 tblsp Fish sauce
  • 2 heads Pickled garlic, finely chopped
  • 1 Celery stick, finely diced
  • Salt
  • Ground black pepper
Garnish
  • 2 tblsp Peanut oil
  • 4 Garlic cloves, thinly sliced
  • 4 Small red shallots, finely sliced
Method

Season the minced pork. Bring the stock to the boil in a large pan, then add the rice. Add the pork in small amounts using a teaspoon. Stir in the fish sauce and pickled garlic and simmer for ten minutes. Stir in the celery.

Garnish and serve hot.

Garnish

Heat the oil in a frying pan and add the garlic and shallots. Stir fry over a low heat until brown. Drain on kitchen paper.
