Pork with Cabbage and Corn PDF Print E-mail

Ingredients

  • 750 gm Pork ribs, chopped Image
  • 1 Onion, medium size, cut into rings
  • 2 Large tomatoes, cut into rings
  • 2 Garlic cloves
  • Pinch of cumin seed
  • 8 Whole peppercorns
  • 2 tblsp Vinegar
  • 1 Medium cabbage, sliced
  • 350 gm Sweetcorn
  • Salt and pepper

Method

Cook the pork in just enough water to cover in a heavy flameproof casserole. When the ribs are tender (about 1 hour) add the onion and tomato and cook a few minutes longer.

Blend the garlic, cumin, peppercorns and vinegar. Add to the meat along with the cabbage and sweetcorn. Stir well and season. Simmer until the cabbage is cooked.
