Braised Tripe PDF Print E-mail

Ingredients

  • 1 kg Pork tripe
  • Salt
  • 2 Slices of ginger root
  • 2 Spring onions
  • 2 tblsp Sherry
  • 4 tblsp Soya sauce
  • 1 tblsp Sugar
  • 1 tsp Fivespice
  • 2 tblsp Vegetable oil
  • 1 tsp Sesame seed oil
Method

ImageWash the tripe thoroughly, rub both sides with the salt several times then rinse well.

Cook the tripe in boiling water for 20 minutes. Drain.

Brown the tripe lightly in hot oil then add the ginger, onions, sherry, soya sauce, sugar and fivespice. Add 1.2 litres water, bring to the boil then cover and simmer for 2 hours.

Remove the tripe and cut into small slices. Garnish with sesame seed oil.
