Ingredients
Cook the tripe in boiling water for 20 minutes. Drain. Brown the tripe lightly in hot oil then add the ginger, onions, sherry, soya sauce, sugar and fivespice. Add 1.2 litres water, bring to the boil then cover and simmer for 2 hours. Remove the tripe and cut into small slices. Garnish with sesame seed oil. |
