Chilies
Many recipes in here call for the use of fresh or dried chilies. The size and 'hotness' of chilies vary substantially. For comparison, when the type of chili is not specified, the fresh chilies noted in the recipes are approximately 75 mm long and between 3,000 and 5,000 Scoville units (e.g. Jalapeno chilies).ImageThe dried red chilies are approximately 50 mm long and around 10,000 Scoville units. If using other types of chilies, the recipe should be adjusted accordingly, depending on particular tastes.
